If you are anything like me one of the most challenging times of the day is figuring out what to make for dinner. You want something healthy and nourishing for your family, and EASY and QUICK to make. These are some of my favorite go-to dinners for those busy weeknights after school, soccer, guitar etc…. practice! Bon Appetit!
PS. I am a vegetarian that tries to eat as little wheat as possible, so all the recipes have no meat in them, and many are gluten-free. I am sure that if you need to have meat to make it a dinner you can add a little meat of your choice to any of these recipes. However, my Chicago meat eating husband seems to be satisfied with most of these….. give one of them a try maybe a vegetarian meal is not as bad as you might think!
